Dhal as the core ingredient and then spices, dhal lentil rice can easily be put together in the rice cooker as a wholesome one pot meal.

Tikka Masala Potato
To make - sauté 7 sliced shallots with 1 tsp mustard seeds in 2 tbsp of butter.
Add some plain chilli powder and 1 tsp turmeric/kunyit powder.
Stir.
Add about 7 boiled and sliced potatoes (with the skin), some sliced coriander leaves, 1/4 tsp chat masala (or garam masala or all spice powder) and salt.
Stir over high heat for a couple minutes.
Dish out.
Optional - for a little tanginess, add some lime juice while stirring the potatoes.

Soy chunks in tomato chilli gravy. Ingredients -
Ginger garlic paste, smashed shallots (5), cinnamon, star anise, palm sugar, curry powder, tomato paste, soy chunks (soak to soften and drained), fenugreek leaves (opt), coriander leaves, salt and oil.

Saute ginger garlic paste, cinnamon and star anise. Add tomato paste, curry powder, palm sugar, salt and water (as needed). Simmer.

Add soy, stir to combine all ingredients, add fenugreek leaves & coriander leaves, stir & dish out.

1 pc tofu (microwave or steam for 2 mins)
Pour #soysauce
Add crispy fried garlic in oil.
Sprinkle #springonion atop or in.

Chana dal thogayal/chutney.
Soak dal (1/2 hour) & drain off water. Fry in oil and keep aside. In the same pan, leave abt 1 tbsp oil. Fry curry leaves, chilli & cumin seeds. Add back dal inside, stir and remove frm heat. Pulse/blend in blender with yogurt, milk and salt till creamy and smooth. #plantbasedrecipe #vegetariancuisine #CookWithNavaK
French beans stir fried with kei chi/wolfberry and garlic -
healthy, nutritious and in a jiffy. To make:
heat 2 tbsp of oil.
Add 5 smashed garlic.
Sauté till lightly brown.
Add one handful sliced beans and
2 tbsp soaked and rinsed berry (see pic).
Season with salt.
Stir fry over high heat. If needed sprinkle some water to soften beans.
Dish out.

Saffron rice - 2 cups washed pusa gold extra long basmati rice, 1/4 tsp saffron strands, a pinch of salt and 3 cups water into the rice cooker.
Cook, fluff up and done.

No cook zucchini pickle.
Thinly slice 1/2 zucchini, 1 medium size red onion and
1 red chilli.
Mix and keep aside.
In a bowl,
mix 1/2 tsp turmeric powder,
1 1/2 tsp ginger juice,
juice from one lime,
1/2 tsp crushed black pepper and enough of palm sugar and salt. Stir all together and pour over zucchini mixture.
Toss and keep aside for 1/2 an hour before serving.

Note: zucchini can be replaced with cucumber.
All ingredients are estimates and so plus or minus as per your own taste.

Pasalai keerai kootu/purple stem spinach cooked with dhal.
To make -
simmer 1 bunch sliced spinach with
5 sliced shallots,
1 sliced tomato,
1/4 cup masoor/orange dhal,
1/2 inch sliced ginger,
5 garlic and some water.

Gently mash, add salt and 1 tsp turmeric powder.
Stir and simmer.
Pour 1/4 cup
coconut milk, simmer and remove from heat.

Heat 2 tbsp ghee and quickly
temper 1 tsp mustard seeds, some curry leaves
and some fresh red chillies.
Tip into spinach mixture and stir.

Malaysian Plant Based Potato Sambal.

Heat 2 tbsp mustard oil, sauté 1 large chopped red onion.
Add 1 tsp garlic paste/or chopped garlic and 1/2 tbsp dried chilli paste.
Stir and cook till oil splits.
Add 2 chopped tomatoes, stir and cook till mushy.
Add 4 boiled and sliced potatoes (with the skin).
Add some coriander leaves and salt.
Stir and cook till dry over high heat.
