No cook zucchini pickle.
Thinly slice 1/2 zucchini, 1 medium size red onion and
1 red chilli.
Mix and keep aside.
In a bowl,
mix 1/2 tsp turmeric powder,
1 1/2 tsp ginger juice,
juice from one lime,
1/2 tsp crushed black pepper and enough of palm sugar and salt. Stir all together and pour over zucchini mixture.
Toss and keep aside for 1/2 an hour before serving.

Note: zucchini can be replaced with cucumber.
All ingredients are estimates and so plus or minus as per your own taste.

Pasalai keerai kootu/purple stem spinach cooked with dhal.
To make -
simmer 1 bunch sliced spinach with
5 sliced shallots,
1 sliced tomato,
1/4 cup masoor/orange dhal,
1/2 inch sliced ginger,
5 garlic and some water.

Gently mash, add salt and 1 tsp turmeric powder.
Stir and simmer.
Pour 1/4 cup
coconut milk, simmer and remove from heat.

Heat 2 tbsp ghee and quickly
temper 1 tsp mustard seeds, some curry leaves
and some fresh red chillies.
Tip into spinach mixture and stir.

Malaysian Plant Based Potato Sambal.

Heat 2 tbsp mustard oil, sauté 1 large chopped red onion.
Add 1 tsp garlic paste/or chopped garlic and 1/2 tbsp dried chilli paste.
Stir and cook till oil splits.
Add 2 chopped tomatoes, stir and cook till mushy.
Add 4 boiled and sliced potatoes (with the skin).
Add some coriander leaves and salt.
Stir and cook till dry over high heat.
Walla!!!
