Recipe for the day - White Choy Sam/ Sawi Putih Masak Lemak/Coconut Milk Stew -

Sawi putih masak santan:
Add sliced tomato (1), sliced small onion(s), curry leaves, fenugreek seeds (halba) and 1 1/2 cup of water. Simmer.
Add coconut milk (1 cup), sawi, season with salt & lime juice (optional), simmer to heat through
remove from heat.

Chinese Soy Potato Stew
the stock or use ready made. Here's a basic stock: red onion, spring onion and carrot(s). Simmer over very low heat to extract stock.

Sauté
1 large sliced red onion
6 small pieces of ginger
1 tsp black pepper corn
3/4 small cinnamon sticks and 1 star anise in 2 tbsp oil.
Add 5 sliced potatoes, stir, pour enough veg stock, cover and simmer to soften.
Open cover, season with sweet soy sauce and dark sauce (salt: taste first bf adding).
Stir, remove from heat and garnish with spring onion and thin stripes of ginger.

Tempeh Spinach.
Healthy, affordable easy and cooked in a jiffy.
To make:
Pour 2 tbsp of oil in a wok/pan.
Add cubed tempeh (1 packet).
Cook to lightly brown on both sides.
Add 10 chopped garlic.
Stir in.
Add baby spinach (1 bunch, remove roots and slice).
Season with salt.
Stir and cook over high heat to soften spinach and dish out.

Turmeric Curry Leave Cabbage. Heat 3 tbsp oil,
sauté 1 tsp mustard seeds with 1 sliced red onion.
Add shredded cabbage (1/2 medium size),
1 tsp turmeric powder,
curry leaves,
season with salt,
stir quickly and
remove from heat.

Curry leaf kerabu bendi/okra salad.
To make - simmer or steam a handful of bendi.
Cool down,
slice and
add in a bowl with 1 chopped red chilli,
3 choped shallots,
1/4 inch chopped ginger,
2 sprigs sliced/shredded curry leaves and
some sugar,
salt and lime juice. Toss together.

Sliced, dip in a spicy flour batter and deep fried for packing a crunchy outer layer and soft melting moment bite inside.

Indian Style Stir Fried Veggies
To make
Add 1 tsp of mustard seeds
1 thinly sliced red onion
1/2 tsp ginger paste
1/2 tsp garlic paste
1 sliced green chilli and
3 sprigs of curry leaves in 2 tbsp of oil.

Stir and fry,
add 1 handful of French beans, cauliflower,
ladies fingers (all sliced),
1 tsp of turmeric powder and salt inside.
Stir, sprinkle a little water, stir to cook and dish out.

Oyster mushroom and tofu stir fried with cumin seeds.
Lightly fry 1/2 sliced tofu on both sides in 2 tbsp of oil.
Remove and keep aside.
In the same oil, fry 8 smashed garlic and 1 tsp cumin seeds.
Add mushroom,
stir to soften,
add fried tofu,
2 sprigs of spring onions and salt. Stir all in and dish out.

Sri Lankan Bitter Gourd Salad. Thinly sliced bitter gourd mixed with some turmeric powder and salt.
Squeeze tight before frying.

Thereafter, toss alongside slice green chilli,
tomato (both without seeds), shallots,
coriander leaves,
and a tiny bit of salt and
lime juice (ingredients as needed).
