Old Cucumber And Kei Chi (Wolfberry) With Gingko Nuts Soup
Natural sweetness of kei chi/wolfberries, soft texture of old cucumber and contrasting crunch of gingko nuts for a vegetarian soup.

Belacan ikan bilis sambal.

To make:
crispy fry 1 cup soaked and rinsed bilis/anchovies.
Remove and keep aside.
Leave enough oil in the same pan.

Sauté 4 chopped shallots.
Add dry chilli paste (as needed) and fry till oil splits.
Add 1/2 tsp belacan powder. Season with palm sugar and salt. Add tamarind juice.
Stir.
Add fried bilis.
Stir well and dish out.

Yoghurt rasam/Yogurt Indian Healthy Soup.

To make:
add 5 smashed shallots,
5 smashed garlic,
3 sprigs curry leaves,
2 sliced green chillies,
1 1/2 tbsp instant rasam powder,salt and
enough water in a pot.

Simmer over low heat.
Stir.
Once heated through, remove from heat and combine in 1/2 cup whisked yoghurt.

Fried bitter gourd. Thinly slice 5 bitter gourds and soak in water for 10 minutes. Gently squeeze out the water. Mix with 1 tsp turmeric powder, 1 tbsp plain chilli powder and salt. Deep fry. If gourd mixture becomes soggy, gently squeeze the water before frying.

Takkali/tomato thokku/chutney. To make:
dry fry 1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
3 sprigs curry leaves.
Then powder up.
Keep aside.

Add 3 chopped tomatoes with 1 tbsp plain chili powder and 1 tsp turmeric powder.
Stir over heat.
Add water, palm sugar, tamarind/asam juice and salt(all as needed).

Simmer to a mushy texture. Add curry leaf powder, pour 1 tbsp gingerly oil, stir and dish out.

Snake gourd kootu (cooked with peas).
To make:
cut one gourd, remove seeds and slice.
Add with 1 sliced tomato
1/3 cup green peas without skin (soaked for 10 mins)
4 sliced shallots
1/2 inch sliced ginger
4 sliced garlic
1 tsp turmeric powder
salt and enough water.

Simmer till soft and tender. Temper/fry 5 sliced shallots
1 tsp fennel seeds and
2 sprigs sliced coriander leaves in 1 1/2 tbsp ghee or oil.

Combine into gourd mixture.

Bitter gourd omelette.
To make:
fry 5 chopped garlic in 3 tbsp of oil till lightly brown.
Add 1 small thinly sliced gourd. Stir and cover with a lid to slightly soften.

Open lid, break 3 eggs on top and spread over gourd.
Cover again to cook.
Open lid,
Add sliced red chillies, sliced spring onion and salt.
Gently stir and dish out.

Green brinjal parathal/stir fried. To make:
simmer about 13 small green brinjals to soften.
Remove, cool down and sliced/cubed.
Add in a bowl with
1 tsp plain chilli powder,
1 tsp turmeric powder,
1 tsp cumin seeds,
5 sliced shallots,
3 sprigs curry leaves and
salt to taste.
Gently mix together.

Heat 2 tbsp of oil, add brinjal mixture, stir over high heat for a couple of minutes and off the heat.
Combine in a little lime juice.

French beans with turmeric and eggs.
To make: thinly slice one bunch of beans.
Mix with 1 tsp chilli powder,
1 tsp turmeric powder,
3 sliced shallots,
1 tsp cumin seeds
and salt.

Heat 2 tbsp of oil and tip beans mixture inside.
Stir and cook to soften.
Push beans aside and pour 2 lightly beaten eggs in the centre. Pour a little oil on top if needed. Lightly scramble eggs and fold over beans.

Nyonya prawn sambal.
To make: blend/pulse -
1/2 inch fresh turmeric,
1/2 inch ginger,
5 shallots,
1 lemongrass,
1 tomato,
1/2 inch roasted belacan/shrimp paste,
3 fresh red chillies and
3 dried red chilies to a smooth paste.

Heat 1/4 cup oil and fry paste till aromatic and oil splits.
Add 6 large/medium size prawns (devein without removing the skin and head).
Stir in.
Add enough water for gravy and to cook prawns.

Season with palm sugar, salt and lime juice.
Stir.
Once gravy thickens and prawns are cooked,
combine in 3 to 4 thinly sliced kaffir/limau purut leaves.
Stir and dish out.
