Happy Night World♥️♥️♥️. Before I hopped into bed, let me share this #recipe which popped up in #facebook. I might as well.

Indian Yogurt Soup.
To make:
simmer 1 sliced tomato,
1 sliced green chilli,
1 sliced red onion,
5 crushed garlic,
3 sprigs curry leaves and enough water till soft and mushy.

Pulse/blend till smooth.
Pour back in the pot.
Add 1 tsp turmeric powder,
1 tsp chilli powder and
season with salt.
Add more water if you want to dilute the soup.

Simmer to heat through.
Remove from heat. Whisk in 3 tbsp yoghurt and
add crushed black pepper.

Curry Leaf Fish
Marinate fish with fish curry powder, turmeric powder and salt.
Keep aside.
Fry a handful of curry leaves in oil till crispy. Remove.
Then fry fish.
Gently crush curry leaves and add over fried fish with sliced green chillies.
Serve with calamansi lime.
Note: ingredients as per taste.

Let’s cook
Sweat/sauté sliced onion, smashed garlic and curry leaves.

Add fish curry powder (mix with
some water), tomato and 1 tsp halba/fenugreek seeds.
Stir.
Add potatoes.
Stir.
Pour water and cook to soften potatoes.
Add salted fish (soaked and rinsed), tamarind juice and some salt.
Stir.
Simmer for 5 minutes and remove from heat.
Note - ingredients as needed.

Masala ginger tea.
Simmer tea over low heat with cumin seeds,
coriander seeds,
bay leaf,
cinnamon,
star anise,
crushed cardamom,
crushed ginger and
enough water to extract the tea mixture.

Drain and mixed with sugar and milk.
Note: adjust ingredients as per taste.

Goreng Petola Bilis/Angled Gourd, aka Luffa Anchovies Stir Fried.
Very straightforward cooking technic and ingredients - bilis, garlic, sliced petola, oil and salt.

Chinese Vegetarian Vegetable Stir Fry
Ingredients (as needed)
Snow beans
Lotus root
Carrot
Baby corn
(Simmer or steam thaw ingredients to soften)
Fucuk/taufu sheets - soak in water to soften.

For frying (as needed)
Dried red chillies
Cashew Nuts
Garlic
Ginger
Oil
Salt

Method
Fry cashew in oil.
Add chillies, garlic and ginger.
Stir.
Add vegetables and salt.
Stir fry over high heat and dish out

Tub Tim Krob (red rubies with coconut milk)
#ThaiDessert
Though generally it’s water chestnuts for red rubies, I used sengkuang/sweet turnip and turned out fab as well.

#recipe:
Cut turnip into cubes and soak in water with red colouring (for about 30 mins).
Add 1 cup cassava/tepung ubi in a zip lock bag, add turnip and coat all over.
Shake off excess flour (see pic) and put in boiling water.

Simmer for 3 mins, drain and plunge in ice water.
To serve, put rubies in a bowl, add coconut milk (add a pinch of salt), sugar syrup (simmer sugar with pandan leaves) and ice cubes (optional).
