Chinese white pepper soup -
The convenient way to a healthy
soup.
Add spice sachet, pork or chicken, 1 sliced tomato and water in to a pot, simmer over very very low heat.
Then, you can add some soaked and sliced black fungus, some soaked red dates and kei chi/wolf-berries (these are optional). Stir, season with salt and simmer for another couple of minutes. Done.

Garlic Yogurt Rasam.
Fry some garlic in oil,
add rasam powder,
stir and simmer to heat through.

Therefore, switch off the heat.
And add
whisked yogurt, pepper and coriander leaves.
Simmer. No need to boil.

Spring Onion Rasam.
To make - add 2 chopped tomatoes,
6 garlic (remove skin),
6 smashed shallots and enough water in a pot.
Simmer.

Remove from heat,
add 1 1/2 tbsp rasam powder and lightly mash-in (see pic).
Put back the pot on stove,
pour more water (as needed) and salt.
Simmer to heat through and remove from heat.
Add 2 sprigs sliced spring onion and 1/2 tbsp gingerly oil.
Stir and done.

Black bean chicken Chinese soup.
Ingredients:
1 cup black beans (boil till 3/4 tender)
300g minced chicken (mix with 1 tsp ginger & 1/2 tsp garlic paste)
one handful red dates (soaked & scored in the center)
dash of sesame oil
dash of black vinegar
coriander leaves
Oil
pepper
salt.

Method
Mix minced chicken with ginger and garlic paste.
Fry in 2 tbsp oil while breaking it into pieces.
Put in black beans,
pour water (abt 4 to 5 cups or as preferred) and
simmer over very low heat.

Add red dates and salt to taste. Simmer till beans and dates are soft and tender.
Add black vinegar, sesame oil and pepper.
Done.

Chinese Chicken Watercress Soup.
Ingredients: (as needed)
kampung/village chicken
ginger slices
bunch of watercress
1 handful kei chi (dried wolfberries)
pepper
salt
drops of sesame oil.

Method
Simmer chicken with ginger and enough water over very low heat. After about 40 mins or so,
add soaked kei chi and continue to simmer for another 3 to 4 mins.

Add watercress, season with salt, pepper and drops of sesame oil. Simmer for another few mins and remove from heat.

Spinach fish ball soup. Ingredients:
1 bunch spinach (bayam)
1pkt fish ball
1 handful ikan bilis/anchovies, few red dates (soaked and scored in the centre)
garlic (gently smashed)
pepper
salt
drops of sesame oil.

Method
Fry ikan bilis in 2 tbsp oil and remove.
In the same oil,
sauté garlic, pour water, simmer, add red dates and
continue to simmer over low heat for a couple of mins.

Into heated soup, add fish balls. Next add bayam (spinach), season with pepper, salt and drops of sesame oil.
