Malaysian Chilli 🌶 🌶 Dip
Sliced 🌶 chillies,
chopped garlic,
light soy sauce and lime juice. Literally goes with literally anything.

Pumpkin Sodhi (coconut gravy). Remove skin and seeds from 1/4 pumpkin.
Cut into pieces
and add in a pot with 2 sliced green chillies,
1 sliced red onion, 2 sliced tomatoes and
enough water.

Simmer to soften pumpkin,
pour 1 cup thick coconut milk
and
add sprigs of curry leaves,
1 tsp turmeric powder and
salt.
Stir,
simmer to heat through and done.

Fried potato rolls (made from leftover potatoes and capsicum from Thai potato curry).
Remove potato and capsicum from curry, wash thoroughly and pat dry.

Mash up,
add 2 wet bread slices,
3 thinly sliced shallots,
2 sprigs thinly sliced coriander leaves,
2 sprigs thinly sliced coriander leaves,
1 tsp plain chilli powder and season with salt.

Mix all in.
Firmly roll bit by bit into small balls and deep fry.

Note: can also use other suitable leftover veggies.
