Curry Leaf Fish
Marinate fish with fish curry powder, turmeric powder and salt.
Keep aside.
Fry a handful of curry leaves in oil till crispy. Remove.
Then fry fish.
Gently crush curry leaves and add over fried fish with sliced green chillies.
Serve with calamansi lime.
Note: ingredients as per taste.

Mutton bone marrow masala. To make:
pressure cook 12 bones with
1 tbsp ginger paste,
1 tbsp garlic paste,
1 tsp turmeric powder and
some water.
Cool down and keep aside.

For the curry paste:
mix 1 tbsp plain chilli powder,
1 tbsp meat curry powder,
1/2 tsp fennel powder,
1 tsp cumin powder,
1/2 tbsp coriander powder and
1 tsp pepper powder with some water.

Fry paste till aromatic with spices (cinnamon, star anise, cloves and cardamom) and
2 bay leaves in 1/4 cup of oil.

Add mutton,
1 chopped tomato and salt.
Stir and simmer.
Off the heat, combine in sliced coriander leaves and set aside for 1 hour to soak mutton in the gravy before serving.

Note: adjust spiciness as per taste.
More water for more gravy.
After cooking, gently ladle out the oil floating on top of gravy.

Thai Red Fish Curry.
Come, let's make.
1 black pomfret/bawal hitam (or any other) - slice, rub some turmeric powder and keep aside.

Next, heat 1/4 cup of oil,
sauté 5 smashed shallots
and 8 smashed garlic.
Add curry paste (plain chilli powder and fish curry powder (as needed) mixed with some water.

Fry till aromatic, add 1 tsp fenugreek seeds/halba,
1 tsp black mustard seeds
and I chopped tomato.
Stir.

Add 10 ladies fingers/bendi/okra, stir and pour enough water.
Stir and cook till bendi is half cooked.
Add fish, I packet coconut paste or 1 cup coconut milk
,a little fish sauce, a little palm sugar and salt.
Stir gently.
Cook to soften fish, off the heat and combine in some basil leaves.
Done!
