Tom yam fried mee hoon.
To make:
fry 2 tbsp soaked and rinsed dried prawns in 4 tbsp of oil.
Add tom yam paste (as needed). Stir.
Season with fish sauce, palm sugar and salt.
Stir and remove wok from heat (yes, remove the wok from heat)

Combine in 3 slabs of mee hoon (blanched in hot water to soften), 1 tin button mushrooms (sliced thinly),
thinly sliced red onion,
sliced green chilli,
daun kaduk/Thai betel leaves
lemongrass,
basil leaves and
coriander leaves (all thinly sliced).
Toss and serve with calamansi lime.
Top up with sliced red chillies or birds eye chillies.

Note: adjust ingredients as per taste.
Use whichever suitable herbs.
Taste to balance up flavors especially salt.
