Kerala style stir fried cabbage.
To make:
fry 2 tbsp of soaked and rinsed dhal with 2 tbsp of fresh coconut in 2 tbsp of oil till crispy.
Add 1 tsp of coriander seeds,
stir,
add 4 sliced shallots,
stir and
add 1/4 shredded cabbage with 1 sliced tomato.

Season with salt.
Stir fry over high heat and dish out.

Keerai Pal Kottu/Sawi In Coconut Gravy.

Sauté some sliced shallots and garlic in 2 tbsp coconut oil.
Add 2 bay leaves and 1 tsp mustard mustard seeds.
Splatter.

Add I bunch sliced sawi.
Stir.
Pour 1/2 cup coconut milk,
add 1 tsp turmeric powder and season with salt.
Simmer to soften veggie and dish out.

Cauliflower dhal & tofu.
To make:
sauté 1 sliced red onion,
1/2 inch thinly sliced ginger,
1 tsp cumin seeds,
1 tsp mustard seeds and
2 sliced dry red chillies in 2 tbsp oil.
Add cauli florets (1/4 pc),
1 sliced tomato and
2 tbsp soaked dhal.
Stir and pour enough water to soften both cauli and dhal.

Add 1 slightly mashed tofu. Season with salt.
Stir a couple of times and dish out.

Kerala style sawi (green veg) with taufu.
To make: fry 1 tbsp white dhal (ulunthu) till almost crispy in 2 tbsp of oil.
Add 2 tbsp grated coconut and
4 sliced shallots.
Stir.
Add 1 bunch sawi (sliced thinly). Cook to soften, add 1 white taufu (sliced thinly).
Season with salt.
Stir all in for a minute or two. Dish out.

Minty leaves for the cool fresh taste, yoghurt for the natural tinge and that bit of spiciness from dried red chillies.

Brinjal Pickle - as a side dish or condiment for rice.
Let's make:

2 packets/about 1/4 kg small purple brinjals - slit/score a few times at the bottom and leave the stem on (see pictures).
Mix brinjals with 1 tsp turmeric powder and some salt.

Fry in batches till nice and brown, remove and keep aside.
Leave about 3 to 4 tbsp of oil in the same pan.

Add 1 or 2 tbsp (or per taste) dried chili paste/blended dried chilli paste,
1 tsp ginger paste/chopped ginger,
1 tsp garlic paste/chopped ginger,
1 tsp turmeric powder and 2 bay leaves.

Stir and cook till aromatic and oil splits.
Pour 1 cup tamarind juice (not too thick) and 2 tbsp white vinegar.
Season with palm sugar and salt (taste pls).

Simmer to thicken up slightly, add fried brinjals and 1 tbsp dried fenugreek leaves (or some curry leaves)

Gently stir and keep aside before serving, or cool down and bottle up.

Pasalai keerai/Indian spinach with dhal.
To make:
thinly slice spinach (without stems)
add in a pot with 1/2 cup masoor/small orangy dhal (soaked for 20 mins),
1/4 cup grated coconut ( lightly blended/pounded),
1 chopped tomato,
1 sliced fresh red chilli,
5 sliced shallots and
enough water for gravy.

Simmer and cook till mushy.
Add
1 tsp turmeric powder,
2 sprigs sliced coriander leaves, a little asafoetida powder
and salt.

Stir, simmer for a min or 2 and remove from heat.
Optional: add some ghee or gingerly oil.

Spicy baby brinjals.
Ingredients: baby brinjals ( abt 15, cut into 2)
1 tsp fenugreek seeds
1 tsp cumin seeds
2 green chillies
2 red chillies (sliced)
5 garlic (cut into 2)
handful of coriander leaves
1 tsp chilli powder
lime juice
2 tbsp oil
salt.

Method
Saute fenugreek and cumin seeds, garlic and chillies in heated oil.
Add chilli powder.
Stir.
Add brinjals, stir, pour 1/2 cup water, stir and close with lid.

Open lid, cook to soften brinjals, season with salt and lime juice. Off heat and stir in coriander leaves.

Spinach tofu.
Add sliced spinach (1 bunch)
4 shallots (cut into 2)
5 garlic (cut into 2) and
2 cups water.
Simmer till soft and mesh.

Add turmeric powder (1 tsp), tofu and season with salt.
Gently stir.
Remove from heat and stir in 1 1/2 tbsp beaten yogurt.

Temper cumin and mustard seeds (1 tsp), curry leaves and dried chilies in ghee or oil.
Tip into spinach mixture and stir.
