One giant zucchini is all thatβs needed, along with 4-6 garden tomatoes (depending on size), one onion, 2 cloves of garlic, and a generous 1-2 tablespoons of oregano. Use a deep pot and sautΓ© the crushed garlic and chopped onion in olive oil to soften (but not brown). Add chopped zucchini and mix to coat with the flavored oil. Cover and cook, stirring occasionally, until zucchini is soft. Add chopped tomatoes and their juices, salt to taste, oregano to taste, cover and cook until all vegetables are soft and have released their juices.
