Dried Shrimp Egg Sambal
Method:
fry dried prawns till crispy, remove and keep aside.
Leave abt 3 tbsp oil in the same wok. Fry chilli paste till aromatic, pour 1/2 cup of water, add palm sugar and season with salt (if needed).
Stir, add eggs and fried prawns, stir, off heat and stir in basil leaves.

2nd side dish for congee: black bean anchovies (ikan bilis). Ingredients:
1 cup black beans (soaked and boiled till tender)
1 cup anchovies (soaked and rinsed)
3 red chillies (sliced)
4 shallots (sliced)
1 tbsp sweet soy sauce
oil
salt if needed
Method
Fry bilis till crispy,
scoop out excess oil,
add chillies, shallots, stir, add beans.
Stir, pour 1 tbsp soy sauce and 1/2 cup water (salt if needed), simmer and dish out.
