Vietnamese chilli sardine.
To make:
blend 1 inch fresh turmeric
1 tomato
4 garlic
4 shallots
3 red chillies
6 red chillies.
Fry paste in 4 tbsp of oil with 2 smashed lemongrass/serai and spices (1 cinnamon, 3 cloves and 1 star anise).
Fry till aromatic and oil splits.
Add 1 tbsp sweet soya sauce and 1/2 tbsp fish sauce.
Salt too if needed.
Stir.
Add sardines from two cans (drain off sauce).
Cook on one side and gently turn so that sardines are lightly fried with a crispy layer on both sides.
Remove from heat and combine in a handful of basil leaves.

Pasalai keerai/Indian spinach with dhal.
To make:
thinly slice spinach (without stems)
add in a pot with 1/2 cup masoor/small orangy dhal (soaked for 20 mins),
1/4 cup grated coconut ( lightly blended/pounded),
1 chopped tomato,
1 sliced fresh red chilli,
5 sliced shallots and
enough water for gravy.
Simmer and cook till mushy.
Add
1 tsp turmeric powder,
2 sprigs sliced coriander leaves, a little asafoetida powder
and salt.
Stir, simmer for a min or 2 and remove from heat.
Optional: add some ghee or gingerly oil.

stir and
leave aside for 10 mins.
Put in rice cooker,
pour 3 cups water, salt, stir and cook.
Fluff up cooked rice,
stir in sliced turmeric leaf and let it cool down.
Fry abt 4 tbsp coconut and before serving, mix into rice.
