Method.
Heat oil.
Add spices, green chillies, shallots and curry leaves.
Sweat.
Now, add tomato and plain chilli powder (mix in water for a thick paste).
Cook till oil floats.
Add chicken, stir for a couple of times.
Pour water and add salt.
Stir and cook.
Done.

Pour in wok- high heat with quite a bit of oil.
Let it fluff up.
Add sliced onion and cucumber on top.
Season with salt and pepper.
Off the heat.
Gently turn omelette and keep aside.
After 5 minutes, dish is ready.
Note: plus minus the ingredients.

To make:
sauté/fry 5 chopped garlic with 1/2 tsp mustard seeds.
Add 1 bunch thinly sliced long beans.
Add 1/2 tsp turmeric powder and salt.
Stir.
Sprinkle a little water, stir over high heat and dish out.
