Rasam made with home made rasam podi/powder. First, let's make the powder -
2 tsp cumin seeds
2 tsp black pepper seeds (or as needed for the heat)
2 tsp black mustard seeds
Some curry leaves.

Dry fry these ingredients to release the aroma (do not over fry).
Cool down and pound to a smooth powder in a mortar.
Keep aside.

Now, let's make the rasam with it.
Add 1 large chopped tomato, 7 smashed garlic and 2 cups of water in a pot.
Simmer to soften both the ingredients.
Then, lightly mash (see pic).
Add 3/4 tbsp of rasam podi/powder and 1 1/2 tsp turmeric powder.
Simmer.
Pour in some tamarind/asam juice and season with salt.
Lightly heat through and off the heat.
NOTE - store the balance of rasam powder in a bottle for the next pot of rasam.

Poondu Thakkali Rasam/Garlic Tomato Rasam
Coriander powder and cumin powder, lots of garlic and naturally with the rest of the "must add ingredients" for a tangy, peppery and scented with coriander leaves and curry leaves rasam.

Garlic Yogurt Rasam.
Fry some garlic in oil,
add rasam powder,
stir and simmer to heat through.

Therefore, switch off the heat.
And add
whisked yogurt, pepper and coriander leaves.
Simmer. No need to boil.

Spring Onion Rasam.
To make - add 2 chopped tomatoes,
6 garlic (remove skin),
6 smashed shallots and enough water in a pot.
Simmer.

Remove from heat,
add 1 1/2 tbsp rasam powder and lightly mash-in (see pic).
Put back the pot on stove,
pour more water (as needed) and salt.
Simmer to heat through and remove from heat.
Add 2 sprigs sliced spring onion and 1/2 tbsp gingerly oil.
Stir and done.

Oilless Lentil Rasam -
the quick version with instant rasam powder.

To make -
Add 1 sliced tomato,
10 garlic (remove skin) and
1/2 cup yellow dhal/lentil (soak for 1/2 hour) with 2 cups of water in a pot.

Simmer to soften dhall and mash.
Add 2 tbsp of rasam powder and 1 tsp turmeric powder.
Stir.
Pour water (say about 5 to 6 cups or as you like).

Simmer to just heat through.
Off the heat.
Season with salt and black pepper.
Combine in some coriander leaves or curry leaves.

Yoghurt rasam/Yogurt Indian Healthy Soup.

To make:
add 5 smashed shallots,
5 smashed garlic,
3 sprigs curry leaves,
2 sliced green chillies,
1 1/2 tbsp instant rasam powder,salt and
enough water in a pot.

Simmer over low heat.
Stir.
Once heated through, remove from heat and combine in 1/2 cup whisked yoghurt.

Tomato rasam.
Simmer 2 tomatoes with 3 cups of water, mash when soft and tender,
add smashed garlic (6 nos),
1/2 tbsp cumin powder,
1 tsp crushed black pepper,
1 tsp turmeric powder and salt. Let it simmer over low heat.

Pour tamarind juice (as needed), simmer and remove rasam from heat.
Heat 2 tbsp oil, fry coriander leaves till crispy, add dried chilies and mustard seeds,
stir,
tip into rasam and stir.
