Sambal Oelek Telur/Indonesian Egg Sambal.
Ingredients
6 hard boiled eggs - remove skin
2 tbsp udang geragau (tiny shrimps) - thoroughly rinse
1/4 cup oil
Salt to taste
Some sliced red chillies
For the sambal paste
3 fresh red chillies
1/2 inch fresh turmeric
4 shallots
6 garlic
1/2 inch roasted belacan/shrimp paste
1 large tomato
** blend these ingredients with some water.
Method
Heat oil.
Tip in sambal paste and udang.
Stir and cook till aromatic and oil splits.
Season with salt.
Pour in 1/4 cup of water.
Stir.
Drop in eggs.
Add sliced chillies.
Stir a couple of times.
Dish out.

Basic sambal Ijo. Pound green chillies, tomato and shallots. Season with palm sugar and salt or a little lime juice. Ingredients as per taste. For aroma, I added some sliced sweet basil.
