Stock/broth - simmer carrot, cabbage, onion, kafir lime leaves (limau purut) and Thai basil leaves with 10 cups (or as needed) of water.

Curry paste; blend 1 lemongrass, red and dried chilies(as needed), white part of spring onion (3 to 4 stalks), 1 tbsp coriander seeds and 1 tsp cumin seeds. Fry paste in oil till aromatic.
Pour stock in & simmer.

Assemble: noodles, mint and basil leaves, puffed tofu and a dash of black pepper. Thai curry laksa. Pour curry broth over noodles and slurp into the amazing Thai flavors.

Malaysian egg vegetable kurma - scented with pandan leaves, lemongrass, lengkuas/galangal, curry leaves and spices.

To make:
heat 2 tbsp coconut oil with 4 tbsp normal oil.
Sauté 5 smashed garlic and 5 smashed shallots.
Add kurma paste (about 2 tbsp kurma powder mixed with water). Fry over low heat till aromatic and oil splits.

Add 1 sliced tomato,
2 red chillies (slit),
3 or 4 knotted together pandan leaves,
1 smashed lemongrass,
2 sprigs curry leaves,
1 inch smashed lengkuas/galangal and
spices (2 star anise, 3 cloves, 4 cardamom and 2 sticks cinnamon).
Stir all together.

Add 3 sliced potatoes,
stir,
pour enough water for gravy and 1 tbsp black raisins.
Simmer till potatoes are 3/4 cooked.
Add corn (1 packet),
a few button mushrooms,
4 boiled eggs and salt.
Stir and simmer to soften the veggies and potatoes.
Off the heat and combine in 1/4 cup whisked yoghurt.

Aloo Mattar (spicy potato with green peas).
To make:
saute 1 sliced red onion with 2 cinnamon (broken) and 3 cloves. Add 4 boiled and lightly mashed potatoes and
2 tbsp white dhal (soaked and rinsed).
Stir.

Add plain chilli powder (as needed) and
1 tsp turmeric powder.
Season with salt and lime juice. Stir all together over high heat for a couple of mins.
Add 1 cup frozen green peas and some coriander leaves.
Stir again and
dish out.

Snake gourd stir fried with curry leaves.
Ingredients:
snake gourd
dried chilies
garlic
curry leaves
mustard seeds.

Heat oil and sauté garlic, dried chillies, curry leaves and mustard seeds.
Add gourd, salt and sprinkle a bit of water (to soften).
Stir, cook and dish out.

Turmeric/kunyit bendi (okra). To make: sauté 3 sliced dried red chillies, 4 sliced shallots and 1 tsp cumin seeds in 2 tbsp of oil. Add about 1 packet thinly sliced bendi, 1 tsp turmeric powder, 2 sprig curry leaves and salt. Stir and fry to soften bendi to a preferred texture. Dish out.

Optional: sprinkle a little water while frying to further soften bendi.

Curry leaves chutney.
To make:
Dry fry curry leaves (1 small bunch) and few dried red chillies (2 to 3 mins).
Add in blender, pour 1 tbsp gingerly oil, 1 tbsp yogurt, 1/4 cup milk and salt.
Pulse/blend till smooth.
