Ghee Sodhi (coconut milk gravy)
To make:
Add 2 sliced tomato, 4 sliced shallots and 1 cup of water in a pot.
Simmer to soften.
Then mash (see pic)
Add 3 cups coconut milk, 1 tsp fenugreek seeds/halba, 1 tsp turmeric powder and salt.
Stir and simmer to heat through.
Remove from heat and keep aside.
Into a pan, heat 2 tbsp ghee.
Quickly fry 1 tsp mustard seeds, some dried chillies and some curry leaves.
Combine in sodhi mixture.

3 sprigs curry leaves,
1 tsp fenugreek (halba) and
2 cups water in a pot.

Simmer,
add 1 tsp turmeric powder and season with salt.
When heated through,
pour 1/2 cup thick coconut
and lime juice (per taste). Simmer, just for another 2 to 3 mins and remove from heat.

Optional: can add 2 sliced green chillies when simmering.
