Manga Pachadi/Mango Chutney. The customary dish for a vegetarian meal. Let’s grab the recipe now. Simple, easy and minimal ingredients.

Sauté 4 chopped shallots, few broken dried 🌶 chillies, some curry leaves and 1 tsp mustard seeds.
Add mango (2x - with or without skin, sliced).
Stir.
Pour enough water to soften.
Add salt, 1 tsp turmeric powder and palm sugar.
Taste.
Cook over low heat and dish out.

Mango chutney.
Into 5 sliced small mangoes,
add 1 tsp ginger paste,
1 tsp garlic paste,
1 tsp coriander powder,
1/2 tsp cumin powder,
1 tsp turmeric powder and
plain chilli powder (per taste). Keep aside.

In 2 tbsp oil,
fry 1 sliced red onion,
1 sliced red chilli,
1 tsp mustard seeds and
3 sprigs curry leaves.
Add mango with spices, stir and pour enough water to soften the fruit for a texture you like.

Season with palm sugar,
lime juice and salt (per taste). Stir, combine in coriander leaves and dish out.

Turmeric Mango Chutney
Simmer 2 sliced green mangoes with 1 1/2 tsp turmeric powder and some water.
Mash with the back of a spoon/spatula for a thick goey mixture. Set aside.

Sauté 1 large chopped red onion in 2 tbsp of coconut oil.

Add 1 tsp of mustard seeds, spices (1 bay leaf, 1 cinnamon, 1 star anise and 3 cloves), 2 broken dried red chillies, some curry leaves, some palm sugar and salt.
Stir in.

Add mashed mango, taste please to balance up the flavours and dish out.

Mango chutney.
To make: sauté 5 chopped shallots,
1/2 inch chopped ginger,
3/4 tsp cumin seeds,
3/4 tsp halba/fenugreek seeds and
3 sprigs curry leaves in 3 tbsp of oil.

Add 2 sliced mangoes,
1 tsp turmeric powder and
1 tbsp kashmiri or plain chilli powder.
Stir and pour enough water to cook and soften mangoes. Season with palm sugar, tamarind/asam juice and salt. Stir and dish out.

Note: nicer taste with palm sugar instead of white or brown sugar.

Easy Mango chutney.
Add 1 tsp turmeric powder
1 tsp chilli powder
2 cinnamon
1/2 tsp garam masala
1 piece palm sugar
salt and
1 1/2 cup water.

Stir and simmer.
Add mangoes (2, remove skin and sliced).
Stir and close with lid.
