Thai style potato fried rice (vegetarian).
Cut two potatoes into thin long stripes, fry in batches till crispy, remove and keep aside.
Leave abt 2 tbsp of oil in the same wok.
Fry 5 sliced shallots, 1 smashed lemongrass and 1/2 inch smashed galangal/lengkuas.
Add 3 cups rice,
pour 1 tbsp sweet soy sauce and season with salt (taste first).
Stir, add one handful of salad leaves or green veg,
3 sliced lime leaves and add back fried potatoes.
Stir on high heat a couple of times and remove from heat.
