Mediterranean Style Tomato Soup
Recipe:
heat 1 tbsp butter,
sauté 1 tsp ginger paste and 1 tsp garlic paste.
Stir,
add 1 sliced tomato and
2 bay leaves.
Stir till tomato becomes slightly mushy.
Add 3 tbsp tomato purée,
2 cups water,
1 tsp coriander powder,
1 tsp cumin powder,
1 tsp fennel powder and
1 tsp turmeric powder.

Stir and simmer till heated through.
Add 1 cup broad beans (or green peas),
season with salt and pepper.
Just simmer for another 2 to 3 mins and off the heat.
Garnish with parsley (or coriander leaves/spring onion) before serving.

Cauliflower potato soup.
Heat 2 tbsp butter and sauté 1 tsp ginger paste, 1 tsp garlic paste and 2 bay leaves.
Add 1 sliced tomato, stir, add cauliflower florets (abt 1/4 portion) and 3 potatoes (cut into medium chunks).

Stir, pour 1/2 liter veg stock and simmer to soften both.
Season with salt and pepper and of the heat.
Combine in parsley leaves (or coriander leaves).

Yellow onions, vegetable stock and Indian spices, paired with grilled baguettes.

Caldo Verde - Potato Veggie and Potato Soup.
Thick filling vegetarian soup, obviously features potatoes, green leafy veg, garlic and olive oil.

Corn soup lemon basil.
Pulse/blend corn with 1 cup carton milk
Remove and keep aside.
Pat dry lemon basil and crispy fry in 3 tbsp oil.
Remove.
In the same oil, fry shallots and garlic till almost crispy, remove.

Pour pulsed/blended corn mixture into oil (the same used to fry basil, garlic and shallots). Simmer over very low heat.
Season with pepper and salt. Pour water (as needed), simmer and garnish with fried garlic and shallots.
