Kerala Cauliflower stew.
Let's make.
Ingredients
1 medium size cauliflower - cut into florets
1/2 cup frozen green peas
1 tomato - chopped
1 tsp ginger paste
1 tsp garlic paste
1 tbsp onion paste
Note - you can also use chopped ginger, garlic and onion
2 dried red chillies - cut into pieces
2 bay leaves
1 tsp black mustard seeds
1 tsp fenugreek/halba seeds
2 cups water
1 cup thick coconut milk
3 tbsp coconut oil
Some shredded curry leaves
Salt to taste

Method
Heat oil.
Tip in ginger, garlic and onion.
Fry till aromatic.
Add chillies, mustard seeds, fenugreek seeds, bay leaves, tomato and cauliflower.
Stir in for around 2 to 3 minutes.
Pour water, stir and simmer to soften cauliflower.
Add peas, pour coconut milk and season with salt.
Simmer just to heat through.
Off the heat and combine in curry leaves.

Bottle gourd aviyal (in coconut mixture).
Add gourd(1 medium size, remove skin, inner white part with seeds and cut into medium size pieces)
1 sliced tomato
1 tsp turmeric powder and
2 cups of water in a pot.
Simmer till soft.

Meanwhile roughly pound/process 3 tbsp coconut with 3 red chillies and 1 tsp cumin seeds.
Combined in simmered gourd. Keep it simmering over low heat. Heat 2 tbsp ghee or oil,
sauté 4 chopped shallots,
add 3 sprigs chopped coriander leaves,
stir,
tip in gourd,
stir and remove from heat.
