MediaQuick chicken tacos !! Needed something quick for tea tonight so mrs @lancs_bbq marinated some @butcher_gav chicken thighs in @norfolk_smoke_pit good ol rub and cooked them on the @traegergrills.uk Ranger in the pouring rain !! Whilst they were cooking I Made a quick tomato salsa and strangely mixed it with some Alabama sauce wich really worked lol ! When the thighs hit 73 I took them of and sliced them thinly ! I warmed up a skillet cause I didn’t want to get wet fried some cheese cheddar and mozzarella mixed on with a tortilla then flip ! Whilst the back is roasting on with some salsa on with the chicken a few picked leaves and a drizzle of balsamic!! And hey presto ! Chicken tacos ready in 20 min for the princely sum of around 75p each !! Who says cheap has to be a compromise on quality ! Use your butcher or you will loose them local is best !!
