The simplest yet the best for yesterday's salted fish curry: cabbage stir fried with curry leaves and turmeric powder/serbuk kunyit.

Heat 3 tbsp oil, sauté 1 tsp mustard seeds with 1 sliced red onion.
Add shredded cabbage (1/2 medium size), 1 tsp turmeric powder, curry leaves, season with salt, stir quickly and remove from heat.

#Vendhayakolumbu/fenugreek seed curry. To make:

The veggies (as needed)
Bendi/okra
Mango
Brinjal
Potato
*slice with or without the skin and keep aside.

For the curry paste
1 tbsp plain chilli powder
1 tbsp fish curry powder
1 tsp cumin powder
1 tsp fennel powder
1/2 tbsp coriander powder
1 tsp turmeric powder
1 tsp crushed black pepper
*mix with some water for the paste

Other ingredients
7 shallots - smash
10 garlic - remove skin
1 tomato - slice
2 green chillies - slice
1 tsp halba
Some curry leaves
Some gingerly oil
1/2 cup coconut milk
1/4 cup oil
A little asofoteda powder
Salt

Fry paste with 1 tsp fenugreek/halba seeds in 1/4 cup of oil.
Add shallot, garlic & curry leaves.
Stir
Add potato & 1 sliced tomato.
Stir.
Pour enough water for gravy, stir & simmer till potato is half cooked.
Add mango, bendi, mango & green chilli.
Season with salt.
Simmer to soften veg.
Pour 1/2 cup coconut milk, stir, heat through.
Off the heat, combine in some gingerly oil & asofoteda powder.
