Iβve been watching Itchy Boots for quite a while. She is a Dutch woman travelling solo through the world on her motorbike for the past 7 years. She goes where most people donβt dare going.
She has reached 3 million followers and made a compilation about her adventures, also telling the story of everything she encounters in her journey of creating her videos.
The comment section is always a delight to see people from every corner of the world cheering her on.
This woman is truly an ambassador for the world. She shows we really are all one, and every country has good people. Not to mention how beautiful the earth is. The drone footage she makes while driving are insanely cinematic and gives a view of the world we never get to see.

Eggplant Wrap ππ³π₯π₯¦π§

Basically you bake 1 layer of thinly sliced eggplant rounds with a melted layer of mozzarella cheese on top.
This brilliant concoction makes up the 'bread' of the sandwich. I filled this one with a layer of basil pesto, some herbed ricotta, roasted peppers, sautΓ©ed grape tomatoes that had burst, arugula, garlic broccoli rabe and balsamic glaze.... Basically whatever you have!
I kept this vegetarian, but you can easily add salami, prosciutto, mortadella or turkey. It's just so versatile.
Preheat oven to 350F. Using a mandolin or a sharp knife, slice a eggplant thin (I used one that was on the thinner side). Arrange on a parchment lined baking sheet in a rectangle, being careful to make sure the ends of each circle are touching. Season with salt and pepper and drizzle with oil. Sprinkle with 1 cup shredded mozzarella. Bake for 25 minutes or until the cheese is golden.
Remove from oven. Invert it and flip it over.
Fill it with whatever you want!

Oscar the cat became famous for his extraordinary ability to predict when patients were near death.
Adopted as one of six therapy cats, he was not particularly social. Yet staff noticed something remarkable: he would lie beside patients hours before they passed away.
This unusual behavior was first observed in 2005 and later documented by Dr. David Dosa, a geriatrician and professor at Brown University.
After recording over 50 cases, Dosa published his findings in the New England Journal of Medicine and later in his book Making Rounds with Oscar: The Extraordinary Gift of an Ordinary Cat.
Oscar's presence gave families the chance to say their goodbyes, providing comfort during patients' final hours.
Theories suggest he could sense changes in body odor or detect lack of movement associated with the dying process.
Oscar passed away on February 22, 2022, at the age of 17 yrs old β€οΈ
