With radar satellites!
They basically measure surface texture, so they can detect when oil on the sea surface quiets wave motion. Oil spills appear as black smears on a grey background on radar satellite images.

Coccolithophores periodically shed their tiny scales called โcoccolithsโ into the surrounding waters. They are rich in calcium so they add a bright, milky-turquoise colour to the water.
Tannins and lignins from roots, leaves, seeds, bark and soil can leach into the water and give it a brown or even black colour.
